Our chefs have quietly and spontaneously introduced ‘Sweet Friday’, as a sweet end to the working week, so to speak. And next week, our chef, Mr Vopěnka, has come up with a double dose of sweetness for you, as you can look forward to our bohemian apple strudel with apples, raisins and quark as early as Thursday. believe it or not, even mistakes have their own international day. This Sunday, 1 March 2026, is International Mistakes in the Calendar Day. Who has never made a mistake and wanted to plan something for 30 February? It is precisely because of this non-existent day that 1 March was chosen to remind us that humans are not infallible and that mistakes sometimes happen.

the first half of this year's winter is almost over and the weather has been like a roller coaster. We've already had snowfall, which delighted skiers but brought tears to the eyes of the winter road maintenance crews. Then we experienced a severe frost that made you not want to leave the house. The week that is coming to an end was more like November, with cold, fog and drizzle. The weather forecasts promise spring-like weather for the near future, with temperatures above freezing and the melting of the remaining snow. What else does this winter have in store for us? Dear guests,
next week, you can continue to discover foreign countries with us. However, not just by their names, but through traditional dishes. On Tuesday, you can look forward to a classic Slovakian meal, Halušky. They are usually served with Bryndza, but we serve them with sauerkraut and smoked meat. On Wednesday, our daily menu will feature Spanish paella Valenciana with turkey and American chocolate brownies with nuts for dessert. With us, you can go on a culinary journey without having to travel for hours to distant lands. So don't hesitate and come and try specialities from other countries.
Incidentally, Monday, 2 February 2026, is World Croquette Day. That's why we've put almond croquettes with mushroom sauce and crème fraîche on the daily menu.

Thanks to our menu, you can take an imaginary trip through Europe with us next week, but also visit Asia. On Monday, we will take a look at the Netherlands thanks to Dutch-style schnitzel, and on Tuesday, we will visit the Iberian Peninsula thanks to the ‘Spanish bird’. On Wednesday, we will refine the soup with a regional speciality from Austria – Styrian pumpkin seed oil. On Thursday, we return to Czechia with an old Bohemian potato soup, but the second course offers a touch of Asian cuisine thanks to bamboo. At the end of the working week, we return to Austria with apple strudel, where we end our journey. Join us on this imaginary hike.

monday, 19 January 2026, is World Day of a superfood. It is made from skimmed cow's, goat's or sheep's milk and is rich in high-quality proteins, minerals (e.g. calcium and potassium) and vitamins (e.g. A and D). It can be prepared sweet or savoury, hot or cold. Due to its moisturising and regenerating properties, it is also used in the cosmetics industry, but also as a remedy. It wasn't just our grandmothers who used this food to treat joint inflammation or breast inflammation in nursing mothers. Do you know what product we are talking about? Yes, it is curd cheese. To mark World Curd Cheese Day, celebrating this delicious and healthy dairy product, we have added pancakes with curd cheese and marinated oranges to our weekly menu for Monday, 19 January 2026. On Tuesday, 6 January 2026, sales at our charity stand for Honzík Šána from Hradiště near Nová Bystřice came to an end. Honzík, now 18 years old, suffered a severe brain infection as a newborn, which left him with a severe mental disability. He is unable to sit up or care for himself and requires constant care. In 2023, our guests donated CZK 23,266 to little Julinka from Neubistritz, and in 2024, they donated CZK 35,562 to Vojtěch Opelka, also from Neubistritz. This year's collection for Honzík Šána has already been supported by visitors to our 1st Wood Carving Symposium, which was organised at the Waldhotel Peršlák in cooperation with Waldviertel Exklusiv from Heidenrechstein, with a contribution of CZK 15,000. Thanks to our campaign, his parents would like to buy a special mattress for Honzík. You are probably curious to know how much money we raised. Thanks to the generosity of our guests, we collected CZK 44,115 at our stands for Honzík. We would like to thank all our guests for their generosity and willingness to help.

Yesterday marked the beginning of the new year 2026. We hope that you have had a good start to the new year and, above all, that you are in good health. On Tuesday, 6 January 2026, Christmas decorations are usually taken down and the Three Kings arrive. In Czechia, this holiday is also associated with the now nationwide Three Kings charity collection. Carol singers dressed as Caspar, Balthazar and Melchior go from house to house with collection boxes, making it possible to start the new year with a good deed. As every year, those who donate will receive a blessing for their house or flat by having ‘K+M+B 2026’ written in white chalk above the front door, or they will receive a small gift. Our Waldhotel Peršlák will also be visited by the Three Kings on 6 January 2026 at 1 p.m.

The year is drawing to a close and on Wednesday, 31 December 2025, we will bid farewell to 2025 and welcome in the New Year in a festive atmosphere.
